Winter Warmers - Parsnip Recipe's



Roast Parsnip Risotto
This recipe  would be quite special if you topped it with a few prawns marinated in ginger, lemon and coriander, but I think it's fine with the roasted parsnip and garlic.

Ingredients


1 1/2 lirte's of chicken or vegetable stock
a pinch of saffron
1 tbs each of olive oil and butter.
1 large leek, white part only, diced
1 parsnip peeled and grated
Maldon salt and freshly ground pepper
400g risotto rice
100ml white wine
6 sprigs of thyme
Reggiano parmesan cheese


Roasted Parsnip
4 large parsnips peeled, chopped and woody centre removed
8 cloves of garlic
Rosemary & thyme finely chopped
olive oil

Method
For the roast parsnip place all of the ingredients in a bowl and toss well then place in oven at 200c and cook for 10 minutes then drop heat to 170c and continue cooking until parsnip is cooked through and golden, approximately 45 minutes.


Meanwhile prepare the risotto.
Heat the stock and add the pinch of saffron threads, then in a separate heavy based pan heat the olive oil and a knob of butter, add the leek and sweat for  5 minutes, add the rice, stir to coat. Turn up the heat and keep stirring so that the rice doesn't colour, add the wine keep on stirring, the wine will evaporate. Add  the grated parsnip, half of the thyme stirring again to coat parsnip then add a ladle of hot stock and a pinch of salt. turn down the heat to a simmer, keep adding ladlefuls of stock, stirring till absorbed then adding the next ladle.  The risotto will take about 25-35 minutes, the rice should be soft but still have a  slight bite.
Turn off the heat and add the butter and parmesan, remaining thyme, season, stir gently and serve topped with the roasted parsnip and garlic.
